Cheesy Zucchini Frittata

Since my sister gave me some free range eggs along with some zucchini from my garden, I thought it would be a great idea to make a Fritatta. After looking on several different sites I decided to use one of Rachel Ray’s pet friendly recipes here. Because you know we always like to share with Roscoe our doggie.

1 baking potato, peeled and thinly sliced
- 2 tablespoons milk 3 eggs, beaten
- 2 tablespoons extra-virgin olive oil (EVOO)
- 1 small zucchini, chopped
- 1/2 cup shredded Asiago cheese
Swap it (Pet friendly tip)
Substitute your dog’s favorite cheese for asiago.
Directions:
- Preheat the oven to 375°. Place the potato in a small bowl with enough water to cover and microwave at high power until tender, about 8 minutes. Drain, add the milk and mash with a fork; let cool. Mix in the eggs.

In a medium, ovenproof skillet, heat the EVOO, 2 turns of the pan, over medium heat. Add the zucchini and cook until tender, about 5 minutes. Add the potato mixture and stir to combine. Bake until set, about 10 minutes. Sprinkle the cheese on top and bake until melted, about 2 minutes more. Let cool, then cut into wedges.

Omigosh!! We were right by there when we went to the mountains a couple of years ago- we went to Vogel but stopped in at Unicoi- Helen, Georgia is a great little place- be sure to go to the flower mill and pick up some flax seed (if you like it) they sell it in whole seeds-it’s the cheapest I’ve ever seen! I am about 4.5 hours from Helen, GA

oh yes I definitely eat fritatta’s often because they are usually so fast, high in protein and simply delicious!
I do usually add a smidge of s& p but often I enjoy it without it. I’ve grown up without s&p so it took me awhile to remember to use it because it does enhance the properties of eggs! ( learned that in food principles class this past semester!)

It was delish- it just needed some smidgen of spice- they are healthy and so great in the summertime with some fruit
