So, Remember the organic pie pumpkins that I bought from Publix for only 99 cents.. I decided to make my first “from scratch” pumpkin pie!
Carving the pumpkin out was tough work!!
I put the pumpkin seeds aside to roast later
All of this was from one small pumpkin!
Instead of cooking the pumpkin (like the recipe) I decided to just blend it in the vitamix
I was so happy to be able to put my TSP spices to use (remember these from my giveaway?) I used 1 ginger, 1 cinnamon, 1 nutmeg and 1 allspice
Ready to go into the oven now!
It’s not beautiful, but it was sooo good! (Notice all of the knife marks- I had to bake it about 25 minutes longer-maybe because it was raw pumpkin? Not sure)
Close up view- it tasted so fresh- I used organic milk, organic cane sugar- the pie crust was the only storebought/non-organic item
Pumpkin Pie Recipe
- 1 pre-made pie crust
- 1 Medium organic pie pumpkin
- 1 cup organic cane sugar
- 1.5 tsp. organic cinnamon
- 1.5 tsp. organic ground cloves
- 1 tsp. organic allspice
- 1 tsp. organic ginger
- 1/2 tsp. vanilla extract
- 1/2 tsp sea salt
- 4 large eggs
- 2 cups organic milk
Puree fresh pumpkin in food processor/vitamix- I added some milk so it would blend better. In a bowl, mix together all ingredients. Pour into pie shell and bake at 425 degrees for the first 15 minutes, then at 350 degrees for the next hour. Let cool and enjoy!
I saved out some raw pumpkin & made a pumpkin sauce in the vitamix (my hubby said it looked like baby food) along with my raw organic broc. for lunch
Apparentally, I am just a big baby- I got sauce all over my shirt haha
I tossed the raw pumpkins (and didn’t rinse off the good stuff
) with some sea salt and baked them at 350 degrees for about 20 minutes I think- they were the Bomb!
I ate the entire bowl!

We had bought this organic creamer last week & halfway through it went sour- Publix gave us our $$ back & we decided to give it another try. I also had a coupon from Lightlife for a free product so I chose these veggie dogs
And I had a $1 coupon off of the Purely Decadent which was already half off- so I got both containers for $4.29- SCORE!
We also found alot of great things at Big Lots- guys they have the best organics for over 1/2 the price!

More Big Lots Loot- South Beach 12 pack bars on sale for $2 for the hubby, Organic Oregon Chai in peppermint for only $1.50, THAI Noodles for the hubby were $1.80- also got things for wedding shower and baby shower
We also got this organic yerba mate tea to share- it was only 70 cents! We were hungry since we hadn’t eaten dinner, so the hubby snacked on a south beach bar & I had a cascadian farm bar & a few organic chips
Later we went to Target and found some baby gifts and I forgot what else… then headed home to eat..
The hubby decided on Annie Chuns since it was late and he was hungry- the company sent me tons of free coupons, so it was a great time to try it out..
Unfortunately, I was busy unpacking the groceries and the hubby ate it all before I could try it out
But he did say that he really likes them. The great thing is you just add water and microwave and throw all the seasonings and toppings in a bowl- he added some hf chicken (unpictured)
There was also this $1 off coupon inside the Annie Chun’s Box- I’ll definitely put that to use
Later, I had an organic veggie plate with hummus for dinner & almost the entire pint of chocolate coconut icecream- omigosh that is the best icrecream ever!!
Things I did today:
- Got in touch with a local farm & ordered some raw milk & raw butter (the raw cheese isn’t ready yet) only $6 for 1 gallon of raw milk & $6 for 1 pd. of raw butter- that is such a good deal!

Thanks for posting the pie recipe! I am in charge of making the pumpkin pie for Thanksgiving this year and I need all the help I can get! Yours looks soooo good too! I would definitely get the cards from Foodbuzz. I am planning on handing them out when I go to Blogger Meet ups or if I am ever out at a restaurant and someone asks me why I am taking pictures! It’s just good to have business cards to spread the word!

I know what you mean about Big Lots!
I’m always shocked at the organic products they have! I buy my Cascadian Farm Organic Cereals there and any other goodies I find. Who would have thought that a discount store could carry such awesome products?!
