Pasta has a big long history. As it born in China, actually, hits popularity in Europe, especially in Italy and become famous all over the world. It has thousands of variety and shape, but mainly you may find in two categories fresh and packed pasta. Few of the most popular forms are Penne, Spaghetti, Fusilli, Elbow or Macaroni, Rigatoni etc.


The best way of cooking pasta is al-Dante, which means having a bite in your mouth. As the name suggests in this method pasta gets cooked 60 to 70 %. The boiling time differs depending of pasta type and quality. For reference it is always a good idea to follow the packet instruction.


The recipe, I am going to share, is one of the most easy pasta recipe. Whether you need to prepare for office lunch box, or lazy dinner, the recipe is always contributes its gorgeous taste and flavor at your table. 



COLD PASTA SALAD RECIPE 

Quick Ingredients

2 cups Packed Pasta

1 cup boneless Chicken

1 cup Broccoli

1 cup chopped baby spinach

1 cup Cucumber

½ cup Tomato

4 tbs Mayonnaise

½ cup Grated Cheese 

3 tbs Mixed Italian herb

½ tbs Oregano

½ tbs Minced Garlic


PASTA SALAD ITALIAN DRESSING


2/3 cup Olive Oil

4 tbs Vinegar

2 tbs Lemon

1/2 cup Vegetable oil

2 tbs Dry Italian Mixed Herb

1 tbs minced garlic

½ tbs Salt & pepper







Method:


Boil water for pasta adding a pinch of salt. Add pasta once the water started boiling. Add 1 tbs spoon of oil to avoid pasta sticking together. Use the packet instruction for the timing. Drain it once it cooked 70%.


Marinate boneless chicken cube with salt mix herb and olive oil.


Cut all the vegetables into dice. Cut the broccoli florets in equal sizes.


In another pan boil the water by adding salt. Add broccoli and blanch it. Take it out and place immediately into iced water to stop cooking process. The color of the broccoli should be intact.


Now make the dressing by taking all the dressing ingredient to gather in a small glass bottle and shake vigorously. The dressing can be saved into the refrigerator for six months.


On very in a very hot pan, add little oil and grill the chicken pieces and cook it for 5- 6 min.


The real mix


Take the cold pasta in bowl. Add all vegetables, chopped spinach, chicken, minced garlic, mixed herb, oregano, salt, pepper, mayonnaise and cheese. Give it a good mix with two salad spoons or with your hand, but make sure do not squeeze any ingredients. And your super testy cold past salad is ready to serve.


Bottom Line


It is a very healthy and fresh recipe, where the food nutrients are intact. It will take 30 to 40 min to prepare and you can enjoy with white wine or fruit juice.
